Many food blogs teach people how to bake. Sprinkle Goodies hopes to help people believe they can bake.

“Happiness doesn’t have to be complicated. Sometimes it begins with apples, a handful of walnuts, and a warm oven.”
Welcome to Sprinkle Goodies – Where Baking Meets Happiness
Simple ingredients. Seasonal flavors. Homemade happiness.
This easy apple biscuit cake is a lovely way to turn everyday ingredients into a cozy homemade treat. A layer of crisp tea biscuits sits beneath tender apple slices, cinnamon, and ground walnuts, all finished with a light, fluffy cake batter. As it bakes, the apples soften and the walnuts and biscuits help absorb their juices, so the top bakes beautifully instead of becoming soggy.
Apple Biscuit Cake
Prep time: about 15 minutes | Bake time: 20–25 minutes | Pan: 14.6 × 15.7 inches (37 × 40 cm)
Ingredients

- 7.8 oz (222 g) plain tea biscuits or digestive-style biscuits, about 33–34 biscuits
- 3–4 apples
- A little ground cinnamon, to taste
- 2.1–2.5 oz (60–70 g) ground walnuts
- 3 large eggs (US large / approx. 60 g each in shell)
- 1/4 cup (60 g) granulated sugar
- 1 cup (120 g) all-purpose flour
- 1 teaspoon baking powder
- Powdered sugar mixed with a little cinnamon, for dusting
Instructions

- Preheat the oven to 340°F (170°C). Line a 14.6 × 15.7-inch (37 × 40 cm) baking tray with parchment paper.
- Arrange the biscuits side by side in a single layer across the prepared tray.
- Beat the eggs and sugar until pale, thick, and fluffy.
- Mix the baking powder into the flour. Sift or sprinkle the dry mixture into the eggs and gently fold it in with a spatula until just combined.
- Peel and core the apples, then slice them thinly. Arrange the slices over the biscuits and sprinkle with a little cinnamon.
- Scatter the ground walnuts over the apples, then gently spread the egg batter across the top.
- Bake for 20–25 minutes, or until the top is golden and a toothpick inserted into the cake layer comes out clean.
- While the cake is still slightly warm, dust the top with powdered sugar mixed with a little cinnamon. Let it cool until just lukewarm before slicing and serving.

Baking Tips
- Peel and slice the apples at the last moment to help prevent browning. If you need to prepare them early, toss the slices with a little fresh lemon juice.
- The biscuits and ground walnuts absorb some of the apple juices, helping the cake layer bake through without turning gummy or soggy.
- Apple varieties vary in juiciness. If your apples are especially large or very juicy, use 3 rather than 4.

Storage
Store covered in the refrigerator for up to 3 days. Bring slices closer to room temperature before serving for the best texture.
Frequently Asked Questions
Can I use a different type of biscuit?
Yes. Plain tea biscuits, petit beurre biscuits, or digestive-style biscuits can all work. Choose biscuits that are sturdy enough to form a base.
How do I know when it is ready?
The top should be golden and spring back lightly when touched. Check the cake layer with a toothpick; it should come out without wet batter.
Can I leave out the walnuts?
You can omit them, although they add flavor and help absorb some of the apple juices. The texture may be a little different.
