Fresh Apple Cake

Ingredients
– 350 g /3 cups sliced (or 3 medium apples) peeled, sliced apples
– 200 g / 1 cup brown sugar
– 4 whole eggs
– A pinch of salt
– 200 g / 1 cup sugar
– A little vanilla extract
– 300 g /2 ½ cups all-purpose flour
– 100 ml / 7 tablespoons of vegetable oil
– 200 ml / ¾ cup of milk
– 1 packet (10 g) baking powder
– Ground cinnamon and powdered sugar for dusting
– Optional: 200 ml /¾ cup whipped cream for serving

Instructions
Line a 27 × 40 cm baking tray with parchment paper.
Spread the chopped apples evenly over the bottom of the tray. Sprinkle with the brown sugar and gently mix together.
Beat the eggs with salt, vanilla and sugar until fluffy. Gradually add the oil and milk, then the flour mixed with baking powder.
Pour the batter over the apples.
Bake at 180°C (350°F) for 20–25 minutes until golden.
Turn the cake onto a board so the apples are on top and cool completely.
Dust with cinnamon and powdered sugar before serving. Optionally serve with vanilla pudding or whipped cream.
