300 g all-purpose flour (2½ cups)
5 eggs
200 g granulated sugar (1 cup)
100 g butter (7 tablespoons), melted
1 packet baking powder – 16 g (about 1¼ tablespoons)
1 teaspoon vanilla extract
50 g unsweetened cocoa powder (½ cup)

1 × 28 cm (11-inch) round cake pan, greased and dusted with flour

400 g mascarpone (14 oz)
1 teaspoon vanilla extract
100 g powdered sugar (¾ cup + 1 tablespoon)
200 ml heavy whipping cream (¾ cup + 1 tablespoon)

2 bananas, sliced
Instructions
1. Prepare the Cake
Preheat the oven to 180°C (350°F).
Grease a 28 cm (11-inch) round cake pan with butter and dust it lightly with flour.
Separate the egg whites from the egg yolks.
Beat the egg whites with a pinch of salt and a little vanilla extract until stiff peaks form.
In a separate bowl, beat the egg yolks with the sugar and vanilla extract until pale and creamy. Gradually add the melted butter and mix well.
In another bowl, combine the flour, baking powder, and cocoa powder. Gradually add the dry ingredients to the egg yolk mixture and mix thoroughly.
