450 g/16 oz  tagliatelle noodles

4 eggs

200 g/ 1 cup sugar

100 g/ 3/4  cups raisins

1 teaspoon vanilla extract

1 liter/ 4 cups  creamy cottage cheese (or quark)

Seasonal fruits-optional

Powdered sugar -optional

Instructions

Cook the tagliatelle according to the package instructions until tender. Drain well and rinse under cold running water. Set aside to cool.

Separate the eggs.

Beat the egg whites with half of the sugar, the vanilla extract, until stiff, glossy peaks form.

In a separate bowl, beat the egg yolks with the remaining sugar and a little vanilla extract until pale and creamy. Add the creamy cottage cheese (or quark) and mix until smooth. Stir in the raisins. If desired, soak the raisins beforehand in about 2 tablespoons of lukewarm water for a few minutes.

Fold the cooled noodles into the cottage cheese mixture until evenly combined.
